Dairy Free Chocolate Frosting

Frosts 1 two layer 8" cake

1/2 cup                    Shortening (suggested Spectrum brand) (80g)
3 1/2 cups               Powdered Sugar (460g)
2/3 cup                    Cocoa Powder (80g)
pinch                       Salt
1/2 cup                    Soy Milk (120g)
1 1/2 tsp                  GF Vanilla Extract (7g)

1. In the bowl of an electric mixer fitted with the paddle attachment, cream shortening until smooth.
2. Add powdered sugar in 1 cup additions. Mix after each addition.
3. Add cocoa powder and salt, mixing until smooth.
4. Add soy milk and vanilla extract. Mix until combined.
5. Scrape bowl and continue mixing on medium speed for about 5 minutes.

Dairy Free Vanilla Frosting

Frosts 1 two layer 8" cake

1 cup                       Shortening (suggested Spectrum brand) (160g)
pinch                       Salt
3 cups                     Powdered Sugar (350g)
3 Tbsp                     Rice Milk (45g)
1 tsp                        GF Vanilla Extract (5g)

1. In the bowl of an electric mixer fitted with the paddle attachment, cream shortening and salt until smooth.
2. Add powdered sugar in 1 cup additions. Mix after each addition.
3. Add rice milk and vanilla extract. Mix until combined.
4. Scrape bowl and continue mixing on medium speed for about 5 minutes.
